I saw this recipe the other day for a slow cooked pork loin and decided to try it. I bought the pork, and intended to start it in the morning, but got busy and didn’t get it ready until afternoon. It cooked and was ready when I got back from karate last night.
It was supposed to look like this:
However I didn’t quite shred it enough, being late, and mine was more like this when I put tacos together. However it was tasty.
And simple:
- 2lb pork loin
- 1 cup brown sugar
- 2 cups salsa
Drop everything in a crock pot for about 5 hours. Mix it up, I poked some fork holes in the pork. Flip halfway.
Shred the pork with forks when it’s done and cook for another 30-60 minutes to get the flavor in.

We do this with chicken and salsa. Same deal, to make tacos. Easy, good, and always have enough left overs to enjoy a couple more meals of it.
